I came up with this recipe after developing an addiction to Choice Health in Maui. If you've ever been there, you know what I'm talking about.
While it's not quite the same as an the original (you'll have to go to Maui for that), it's an easy and delicious way to start your morning when you are craving a taste of paradise. Acai berries are full of antioxidants and naturally contain no sugar, but sub the granola for quinoa puffs if you have bikini season on your mind.
Morning Acai Bowl
5 medium sized strawberries
1 pack of unsweetened frozen acai berry
1/4 cup almond milk (can substitute with juice)
small spoonful of almond butter or peanut butter
handful of sunflower seeds
handful of granola
honey or agave nectar
Blend acai, almond milk, 1/2 of the banana, two strawberries, and nut butter in a blender until smooth (but not runny - should have the consistency of ice cream).
Chop remaining berries and banana for topping.
Sprinkle granola, sunflower seeds, and fruit on top and drizzle honey or agave on top.
